My parents came back from the valley this past week and brought me home some yummy strawberries, but like always there is to many for one sitting, and way to many to keep fresh.
So what is a girl to do? With a potluck looming and after watching my new favorite channel on cable, The Cooking Channel, I was feeling inspired. I dusted off my Culinary Institute of America cook book and found what I was looking for, a Strawberry Tart filled with wonderful pastry cream.
I had never attempted pastry cream before, and honestly I might never make it again unless the dessert is leaving the house, it is that good. It starts with corn starch, egg yokes, sugar, and whole milk.
The whole milk and sugar are brought to a boil on the stove top.
Once a boil has been reached you temper your egg/cornstarch mixture then put everything back into the pot and wait for the magic to happen.
After this you add butter and vanilla, let cool and literally put it on anything you would like. Maybe just your finger.:)
The next stage is to make the tart. Mine was tolerable, but I will have to work on my methods a little more before I can say I know how to make a tart pastry. It tasted great but the edges were a little burned and the center collapsed once I put the filling on.
After the tart shell has had time to cool completely you fill the tart shell with the pastry cream, layer on the strawberries however you would like, and serve.
Strawberries really are a beautiful fruit. Happy eating.
